Today for lunch I enjoyed this Veggie & Hummus Wrap:

Since it's the middle of winter instead of grilling my veggies, I simply roasted them in the oven this morning while I was getting ready for work.
Then I just re-heated them in the microwave at work for lunch, or I probably could have just eaten them cold.
The Veggies were the best part! I love roasted vegetables, especially red onions & eggplant. I could have done without the Feta Cheese, but it still was a great healthy lunch.
You did all that before work AND get Emily ready too!
