Cider Pork Medallions
Here is my version of Cider Pork Medallions, which I adapted from a recipe back in August 2009's "All You" magazine.
The Apples and Figs are optional.
Sometimes I add toasted pine nuts too.

Norwegian Strawberry Nut Bread
This morning I decided to make one of my favorite breakfast dishes, some homemade bread. Usually zucchini or pumpkin bread comes to mind this time of year, but I wanted something else and thought about all that delicious jelly I preserved from the fresh picked Strawberries this past spring which was made just for a moment like this.
The best way to enjoy out of season produce, and it tastes just as fresh as spring.
Here is the recipe I used from a tiny cookbook my mother gave to me (of which I accidentally burned a page of a while back -my book is pretty beat-up, the sign of a great cookbook);

Pumpkin Pancakes
This morning I wanted to try something different so I decided to give my pancakes a little something to make the most of this beautiful Fall Saturday morning.
So simple and delicious - Pumpkin Pancakes. I simply added a heaping spoonful of canned pumpkin, a dash of cinnamon, and a pinch of nutmeg to my favorite Buttermilk Pancake mix. That's it. Then top with a dab of butter, powered sugar, and syrup! The perfect fall breakfast.

1st Post - One Dish Stuffed Pork Chops
This is my first Blog and my first Blog post. I wanted somewhere to share with others my love of cooking and baking, especially what is in season and Garden Fresh. I love veggies and next year will be hopefully growing my own in my new garden, although there are plenty of farms to choose from in our area that have excellent produce. I believe that fresh picked is best and local is better, my specialty is Strawberry Jelly with fresh farm picked strawberries in the Spring.
But I am starting this Blog in October and the start of Autumn, which is my absolute favorite time of the year. Just thinking of pumpkins, squash of all kinds, apples, and the smell of cinnamon in the air is so exciting and that's what this blog will be about. The best recipes and other seasonal fare.
Tonight's menu - Wednesday October 7, 2015:
I will be cooking Susan Branch's "One-Dish Stuffed Pork Chops, Sweet Potatoes, and Apples" from her "Autumn" Book;
